Huauzontles capeados / Weathered huauzontle

Ingredientes

 

Para las tortas

1 kilo de huauzontles

½ kilo de queso Oaxaca o “de hebra”

6 yemas

6 claras

Harina suficiente

Sal al gusto

Aceite de maíz

 

Para la salsa

1 kg de jitomates asados

4 chiles de árbol asados

1 cebolla en dos mitades

4 ajos

Sal al gusto

Agua

Comino

 

Lavar los huauzontles con cuidado de no desprender las bolitas de la planta. Ya lavado, entonces sí desprender todos los racimos de amarantos verdes (bolitas) y las hojas, dejando lo más posible, las varas y tallos. Exprimir las bolitas con las hojas y hacer unas tortitas con la mano exprimiendo el exceso de agua. Al centro, colocar un poco de queso de hebra. Pasarlas por harina y sacudirlas con cuidado para quitar el exceso. Ya estando lista la mezcla de huevo (claras batidas a punto de turrón, a las que se les agrega envolventemente las yemas batidas aparte) se sumergen ahí para cubrirlas y freírlas posteriormente en una sartén embarrada apenas con aceite. Dorarlas por todos lados.

 

Tenga ya lista la salsa: Licúe los jitomates y chiles asados con una mitad de cebolla, 2 ajos y un poco de agua. Ponga también a freir esta salsa en aceite donde ha acitronado previamente la otra mitad de cebolla fileteada. Añada comino y sal a su gusto. Cuando esté lista la salsa, sumerja ahí las tortitas de huauzontle unos 5 o 10 minutos. Sirva y acompañe con frijoles y tortillas bien calientes.
